Much has been written about the problems with drinking milk and consuming dairy. Many common ailments such as osteoporosis, acne, and weight problems can all be linked to drinking milk and consuming dairy products. In our household, we have since switched to nut milk. We usually drink almond milk, not only for its flavor, but also for its flexibility. Almond milk comes in a variety of flavors: original is the unflavored almond milk, vanilla adds natural vanilla extract for a sweeter taste, and chocolate is a great chocolate milk substitute for those who are lactose intolerant.

My greatest concern when switching from cow’s milk to nut milk was how it would behave in the kitchen. Sure, almond milk tastes great on cereal, but how would it do baking? Baking is not so much a kitchen exercise as a chemical reaction. Ingredients must be mixed in fairly precise amounts and when mixed (and sometimes heated), a chemical reaction takes place creating a baked food. Cow’s milk and butter are used in many recipes to hold things together, to thicken things, or as a flavor.

So, I decided to create a pure vegetarian baked good using nut milk instead of cow’s milk. My first attempt was banana bread. The recipe called for ¾ cup of sour milk, Typically, I would use cow’s milk and add a tablespoon of vinegar and let it stand for several minutes. The vinegar would cause the cow’s milk to curdle which is just what the recipe called for.

I carefully measured out the almond milk, added the vinegar,, and waited. Within a few seconds of adding the vinegar an amazing thing happened. The almond milk curdled just like the regular milk! I was amazed! I added the sour almond milk to the batter and baked my banana bread as usual.

The true test of any recipe is the taste. This banana bread was a winner! By substituting the almond milk for the cow’s milk, I totally eliminated dairy from the recipe without compromising the taste and texture of the finished product. I will be testing almond milk (and rice milk and soy milk) in other recipes and will share my results!

There are more tips like these on WellHabit.com and FastingLife.com

from Robert Cohen of NotMilk.com

Multiple Sclerosis (MS) is a common neurological disease, affecting approximately 300,000 Americans. Two-thirds of those diagnosed with MS are women.

Most researchers believe that MS is an auto immune disease. Auto means “self.” The body’s reaction to a foreign protein is to destroy that antigen-like invader with an antibody. The antibody then turn upon one’s own cells. That is an auto-immune response. In the case of MS, the body’s response is to attack the outer membrane-protecting nerve cells, or the myelin sheath.

Symptoms of MS include tingling or numbness of the limbs, paralyses, and vision problems. Sometimes MS patients experience slurred speech accompanied by chronic pain.

MS costs approximately $2.5 billion each year in America. MS is found in milk-drinking populations. It is interesting to note that Eskimos and Bantus (50 million living in East Africa) rarely get MS. Neither do those native North and South American Indian or Asian populations that consume no dairy products.

Many physicians have noted a dairy link to MS. Many little clues have been reinforced by one very large clue, just published. Each clue provides a piece of the puzzle.

Norway has the highest rates of milk and dairy consumption in the world. Dr. Ashton F. Embry analyzed geogrphical regions, and provides this dairy clue:

http://www.DIRECT-MS.org/

He writes:

“…In Norway MS is up to five times more common in the inland farming areas than in the relatively nearby coastal fishing areas.”

John McDougall, M.D., cites the British medical journal Lancet in pointing out that a diet filled with dairy products has been closely linked to the development of MS. (The Lancet 1974;2:1061)

Dr. Luther Lindner is involved in clinical MS experiments at Texas A & M University College of Medicine. Lindner, a pathologist, writes on his website:

“It might be prudent to limit the intake of milk and milk products…”

A worldwide study published in the journal Neuroepidemiology revealed an association between eating dairy foods (cow’s milk, butter, and cream) and an increased prevalence of MS. (Neuroepidemiology 1992;11:304-12.)

The April 1, 2001 issue of the Journal of Immunology will contain a study linking MS to milk consumption. It has long been established that early exposure to bovine proteins is a trigger for insulin dependent diabetes mellitus. Researchers have made that same milk consumption connection to MS.

The July 30, 1992 issue of the New England Journal of Medicine first reported the diabetes auto immune response milk connection:

“Patients with insulin dependent diabetes mellitus produce antibodies to cow milk proteins that participate in the development of islet dysfunction… Taken as a whole, our findings suggest that an active response in patients with IDDM (to the bovine protein) is a feature of the auto immune response.”

In October of 1996, The Lancet reported:

“Antibodies to bovine beta-casein are present in over a third of IDDM patients and relatively non-existent in healthy individuals.”

Two months later (December 14, 1996), The Lancet revealed:

“Cow’s milk proteins are unique in one respect: in industrialized countries they are the first foreign proteins entering the infant gut, since most formulations for babies are cow milk-based. The first pilot stage of our IDD prevention study found that oral exposure to dairy milk proteins in infancy resulted in both cellular and immune response…this suggests the possible importance of the gut immune system to the pathogenesis of IDD.”

THE MULTIPLE SCLEROSIS/MILK CONNECTION

Michael Dosch, M.D., and his team of researchers have determined that multiple sclerosis and type I (juvenile) diabetes mellitus are far more closely linked than previously thought. Dosch attributes exposure to cow milk protein as a risk factor in the development of both diseases for people who are genetically susceptible. According to Dosch:

“We found that immunologically, type I diabetes and multiple sclerosis are almost the same - in a test tube you can barely tell the two diseases apart. We found that the autoimmunity was not specific to the organ system affected by the disease. Previously it was thought that in MS autoimmunity would develop in the central nervous system, and in diabetes it would only be found in the pancreas. We found that both tissues are targeted in each disease.” (Journal of Immunology, April, 2001)

After fat and casein are removed from milk, dairy processors are left with whey protein. Whey is composed of bovine blood proteins. Serum albumen. Lactalbumen. Dead white blood cells. Hormonal residues including estrogen and progesterone.

The body’s reaction to a foreign protein is to destroy that antigen-like invader with an antibody. For those individuals unfortunate enough to possess a genetic pre-disposition to such an event, the antibody then turns upon one’s own cells. That is what is known as an auto-immune response.

In the case of diabetes and Multiple Sclerosis (MS), the body’s response to whey proteins is to attack the outer membrane protecting nerve cells, or the myelin sheath.

Women are targeted by dairy industry scare tactics that offer misinformation regarding osteoporosis. Two-thirds of MS victims are women. As milk and cheese consumption increase along population lines, so too does an epidemic number of MS cases. The numbers add up. The clues add up. The science supports epidemiological studies.

Got diabetes? Got MS? The milk connection has been established.

Whey protein? Say no way!

LET THEM EAT CAKE?

Undernourished kids are starving to death in nations plagued by war, poverty, and famine. Would you expect the United States to send these unfortunate souls high calorie goodies? That’s not what the dairy industry does. Instead, they take the fat out of milk and add it to American cheese, ice cream, and butter. There’s no American market for what’s left; surplus de-fatted milk which is dried and stored as powder.

PUT STARVING KIDS ON A DIET

Is there justice in sending the starving children the same low fat milk powder that Americans reject?

LAND OF FAKES

Land O’Lakes President John Gherty was all smiles. Gherty joined President Clinton in Washington a few days before the new year for the official announcement of this new program. They take credit for their joint act of altruism. In reality, it’s just another insider subsidy handed to the dairy industry.

Outgoing President Clinton called this an “effort to improve nutrition for school children in developing nations.” Under new agreements, Land O’Lakes will handle the export of over 12 million pounds of surplus non-fat dry milk. Eleven pounds of milk are required to manufacture one pound of non-fat dry milk, so 132 million pounds of milk were required to manufacture the surplus non-fat milk powder for this new giveaway.

IMAGES OF STARVATION

We’ve seen ghastly pictures of children so skinny and impoverished, ribs sticking out of their bodies, so badly needing to gain weight. What these children do not need is a non-fat diet product. That is more than irresponsible. That is insulting. That is a crime against humanity.

DRIED POWDER IN STORAGE

This milk comes from cows treated with Monsanto’s genetically engineered bovine growth hormone. European markets have rejected America’s genetically engineered milk and dairy products. The new deal finds an outlet for a surplus product nobody else in the world will pay for. Got subsidies?

How many more cows will be injected with growth hormones to produce more milk than America’s market can utilize? We’ll take all the fat we can to feed to American children. The American Medical Association must be all smiles.

LACTOSE INTOLERANCE

Can it get worse? Sure can. The de-fatted milk is loaded with a milk sugar called lactose. Three quarters of the world’s population cannot tolerate this milk sugar. Those who are most affected are children of color including Africans and Latin Americans. Who will get this freebie?

GOT DISEASE?

The high temperature used in processing the milk to powder destroys enzymes and most of the microorganisms, but some bacteria form spores, and are protected against destruction. Dry milk infected with staphylococcus toxins have infected thousands of people. The most famous incident was an outbreak of gastroenteritis in Puerto Rico in 1956. In 1966, an enormous increase in salmonella cases was observed by the Centers for Disease Control. The increase was blamed on instant non-fat dried milk.

You probably know at least one person who snores. It could be your partner, parents, grandparents, or even YOU that snore at various noise levels. Some laugh and make jokes about it, but it can be a symptom of a serious disorder called obstructive sleep apnea. And if it is obstructive sleep apnea, then it is no laughing matter; that individual needs to get evaluated by a sleep specialist.

What is snoring?
Snoring is a noise produced when an individual breathes (usually produced when inhaling) during sleep, which in turn causes vibration of the soft palate and uvula (that thing that hangs down in the back of the throat). An estimated 45% of normal adults snore at least occasionally and 25% do so habitually, according the American Academy of Otolaryngology. Problem snoring is more common in men and in people who are overweight. And snoring usually gets worse with advancing age.
The word “apnea” means the absence of breathing. Unfortunately, men are hit with more bouts of disruptive snoring than women. Sorry guys, but even if you don’t think you snore, you probably do.

Treatment for snoring
The most important point to make about the treatment of Obstructive Sleep Apnea (OSA), or Snoring Syndrome, is that effective treatment requires several related problems to be treated simultaneously.
6 Factors That Can Cause Snoring
1.Lifestyle factors
In some studies is growing concern is in, many cases of obstructive sleep apnea and snoring may be related to Western culture. The risk of increased obstructive sleep apnea grows with the many factors described below, many of which are problems currently rampant in our society. Correction of OSA generally requires that these factors be eliminated. At times, elimination of these factors completely resolves the problem.
2. Weight
Excessive weight brought about by a sedentary lifestyle, too many rich foods, or by medically related situations such as thyroid problems, is probably the leading factor contributing to OSA. Bed partners almost invariably make the observation that the larger their snoring spouse becomes, the louder the snoring sounds, and the more often they hear snoring pauses followed by snorts, and a continuation of breathing (i.e., apneas — episodes of obstructed breathing). Conversely, in a large percentage of patients, weight loss down to an ideal weight has reversed the process.
3. Smoking
Smoking has numerous undesirable effects on the body. Most pertinent to OSA are the obstructions to the airway which cigarette smoking causes: swelling of the mucous membrane in the nose, swelling of the tissue in the throat, and blockage of the small vessels in the lungs. Therefore, add this to another list of reasons why you should stop this nasty habit.
4. Alcohol
It is the partial collapse of the airway (breathing tube between nose, mouth and lungs) that is the immediate cause of snoring, and its complete collapse that is the immediate cause of apnea. Alcohol causes too great a relaxation of the airway during sleep. This, and other effects of alcohol on the body, means that it can either cause or greatly contribute to the development of loud snoring and apnea.
5. Organization of sleep
There are two periods of sleep which, given the right circumstances, are especially vulnerable to the development of unstable breathing. These are Stage 1 sleep, which should only occur when a person is first falling asleep but can occur many times during the night if sleep is poor; and REM sleep, which is the time when dreaming most frequently occurs.
If a person has very unbalanced sleeping habits during the week, it can result in the development of very significant respiratory instability during sleep. It’s that simple: unstable sleeping patterns lead to unstable breathing. Therefore, all you need to do is regulate your sleep by getting at least 7.5 hours of it per night. Sometimes, this is all that is required.
6. Medical problems
Anything that can lead to a blockage of the nose, throat, or lungs potentially plays a role in the development of OSA.
Pertinent nasal problems include allergies to air-borne particles such as animal dander, and dryness of the nose because of a wood-burning stove. Factors that can block the throat include large tonsils, large adenoids, excessive amounts of fatty tissue, and at times, the enlargement of some of the complex tissue at the back of the throat. In these cases, surgery can help by removing unwanted or excess tissue.
Snoring can also be a symptom of diabetes or hypothyroidism. Therefore, sometimes the best treatment for snoring and apnea is to go to the source of the problem and treat the medical problem itself.

Lifestyle before surgery
On a final note, if you are an excessive snorer, and constantly get complaints from friends and loved ones, look at your lifestyle very carefully first. Try changing some bad habits to good ones, and exercise more. As long as your doctor determines that your snoring is not stemming from apnea (a disorder where the snorer stops breathing for seconds.
Here are some natural snoring suggested tips for alleviating your predicament:
Sew an object (i.e., a tennis ball) into the pajama top near the small of your back in order to make it uncomfortable to sleep on your back. For at least two to three hours before bedtime, don’t drink alcohol or take sleeping pills, antihistamines, or tranquilizers. They depress the central nervous system and make your tongue floppy and throat muscles loose.
Add some humidity to your bedroom. A dry throat tends to vibrate more than one that’s moist. Try putting a container of water near your radiator. Use extra pillows to raise your head and align your airway. Try not to eat dairy products before bedtime because some people notice a build-up of mucus that can interfere with breathing. Try taking honey (chew honeycomb or swallow a couple of spoonfuls of liquid) daily for a few weeks. Have someone you sleep with, or your roommate, roll you over onto your side when you start to snore. If after all this, you still snore excessively, then I suggest you go see a physician or a nose, ear and throat specialist. Always make surgery your last resort. Even though proven to be safe, surgery can still do damage to your pockets, when all you needed to do was quit smoking or join a gym.

“Allergic asthma and rhinitis, atopic dermatitis
(AD)urticaria…are common diseases of infants and children.
Cow’s milk appears to be the most common offending food…in
cutaneous manifestations of atopic disease. It was recently
estimated that 14% of children suffer from AD and about 25%
from adverse reactions to cow’s milk.”.

If you are a teenager, or the parent of one (I have three
Director of the Department of Pediatrics, Johns Hopkins
University School of Medicine, wrote:

“As pointed out by Dr. Jerome Fisher, ‘About 80 percent of
cows that are giving milk are pregnant and are throwing off
hormones continuously.’ Progesterone breaks down into
androgens, which have been implicated as a factor in the
development of acne…Dr. Fisher observed that his teenage

What do you expect? When teenagers combine their own surging hormones with dietary saturated animal fat, cholesterol, steroid hormones, dead white blood cells, and cow pus, they’re gonna get zits. The good news: The cure is an easy one: NOTMILK!

“As pointed out by Dr. Jerome Fisher, ‘About 80 percent of cows that are giving milk are pregnant and are throwing off hormones continuously.’ Progesterone breaks down into androgens, which have been implicated as a factor in the development of acne…Dr. Fisher observed that his teenage acne patients improved as soon as the milk drinking stopped.”

Don’t Drink Your Milk, by Frank Oski, M.D. (Director, Department of Pediatrics, Johns Hopkins University School of Medicine)

“Acne usually begins at puberty, when an increase in androgens causes an increase in the size and activity of pilosebaceous glands….if a food is suspected, it should be omitted for several weeks and then eaten in substantial quantities to determine if acne worsens.”

MERCK Manual, Merck & Company, 2000

“Acne is an end-organ hyper-response to androgens…These data show that sebaceous glands are stimulated by androgens to varying degrees and support the theory of an end-organ response in acne.”

British Journal of Dermatology, 1998 Jul, 139:1

“Acne vulgaris is a self-limiting skin disorder seen primarily in adolescents, whose etiology appears to be multifactorial. The immunologic response involves both humoral and cell-mediated pathways. Further research should clarify the role of complement, cytotoxins, and neutrophils in this acne-forming response.”

Postgrad Med J, 1999 Jun, 75:884

“Hormones found in cow’s milk include: Estradiol, Estriol, Progesterone, Testosterone, 17-Ketosteroids, Corticosterone, Vitamin D, insulin-like growth factor, growth hormone, prolactin, oxytocin…”

Journal of Endocrine Reviews, 14(6) 1992

“We studied the effects of growth hormone (GH) and insulin-like growth factors (IGFs), alone and with androgen, on sebaceous epithelial cell growth…IGF-I was the most potent stimulus of DNA synthesis. These data are consistent with the concept that increases in GH and IGF production contribute in complementary ways to the increase in sebum production during puberty.”

Endocrinology, 1999 Sep, 140:9, 4089-94

“…serum IGF-I levels increased significantly in the milk drinking group…an increase of about 10% above baseline-but was unchanged in the control group.”

Finding Mad Cow in Oregon puts a new wrinkle in the high protein diet, doesn’t it? What’s a person to do that wants to eat more meat, not less?

Are you Eating Less Meat Due to Mad Cow Disease?

Not the people I’ve spoken with. Most are saying, “Yipee, beef’s on sale!” The food industry has done a great job of convincing us they are providing a safe food supply and we’ve been lulled into a false sense of security. Nothing could be further from the truth.

In July 1988, a ban was introduced in the UK which prohibited the use of the remains of sheep in cattle feed. BSE is thought to have spread to cattle from feed including meat and bone meal made from sheep suffering from a similar brain disease, called scrapie.

Ban Not Properly Enforced

Unfortunately the ban was not enforced properly for many years and remained a paper exercise (exactly as it has been in the US ever since).

Francis Anthony, a Herefordshire veterinary surgeon, and the British Veterinary Association’s spokesman on BSE said, “If the ban had been enforced properly from the start, I have no hesitation in saying categorically that we should be seeing only a few cases today. But that contaminated feed was being given to animals until at least 1995, and possibly a year later.”

The false sense of security for us in the US came from it being widely reported that the practice had been banned. They failed to make it clear that this was a “voluntary ban.” Even I falsly believed they had long ago ended this practice until the recent news reports that it is still being done. Despite there being a clear connection between feeding rendered animals to animals causing Mad Cow disease, the meat and dairy industry continues the practice to this day. Why? Corporate greed, plain and simple. It is a cheap source of “protein” and makes cows and other animals fatten faster. A fatter animals weighs more, and they are sold by weight.

I have no doubt that people in the US aren’t getting excited about the threat or beginning to avoid beef simply because no people have been reported with the disease. After all, this was a sick cow, not a human. Hence, people do not consider it a direct threat. Amazingly they don’t consider those with CJD (Creutzfeldt-Jakob disease) a varient of Mad Cow as being related when clearly it is.

The Costs of Clean Meat Supply

The meat and dairy industry will now begin a campaign to make the higher cost of clean meat seem a ridiculous indulgence rather than a possibly life saving measure. It does cost more to have a clean food supply. I and my family are worth it, are you and yours?

For excellent reference materials read Fast Food Nation by Eric Schlosser, The Crazy Makers by Carol Simontacchi, and Mad Cowboy: Plain Truth from the Cattle Rancher who Won’t Eat Meat by Howard F. Lyman. Be informed then make the choice for you and your family.

Food politics aside, I’m interested in my and my families health and well being, and I’m not interested in supporting an industry that doesn’t care about the quality of their products or whether those products are potentially dangerous or even deadly.

What You Can Do to Avoid Dangerous Meat

* Buy all your meat from the local butcher. He gets the animals from local farmers, and can tell you which Farms, if you ask.
* Buy all your meat from local stores that certify it is grain fed. Visit sites such as EatWild.com
* Cut back on your consumption of all meat in general, substituting beans for instance for protein.
* Eat a “special occasion” steak at the best restaurants such as Ruth Chris’ Steak House. Now that’s a steak!
